For creamy sauce add cashews in paste form
Do you remember the pasta from that restaurant the other day? Your first thought is, it was sooooo creamy, isn’t it? What if I say I have a hack where YOU can make your home cooked pasta THAT creamy by just adding ONE non-dairy ingredient! Thanks for the hydrophilic particles of our dear cashew. A whole cashew is crunchy and firm. However, when you cook a cashew, the internal structure will soften. If you then also grind the cashew, it will completely fall apart into a paste. Now, its not just the pasta sauce you can add this paste to. You can use cashew paste in your paneer butter masala, butter chicken or any dish with gravy where you want a thick and creamy consistency. (reference)
Sugar crystals work their magic in silence
Adding just a few crystals of sugar to any of your home cooked dishes is going to add an aftertaste that will portray that something different is there but no one with every know. Now it’s your choice whether you want to add the crystals after you are done cooking it so that you have that crunchy sweet taste or you want to add them while cooking so that you don’t have the crunchiness and you just want the sweet taste while no one can ever guess!
Make paste of ginger and garlic
Now ginger-garlic paste is the king of flavours, we all can agree on that. But instead of buying it from the supermarket, try making it by yourself from scratch there and then using the fresh ginger and garlic. This is something all good restaurants do. And not just with ginger-garlic paste, with every pastes and sauces, the restaurants usually make it from scratch using the products that they like to add. It is customisable and gives you the comfort of your own ingredients instead of having no choice and having to use the market product. AND you can have a different flavour for your home cooked meal every single time and you’ll less likely to get bored! It is completely up to you how you want your ginger garlic paste to taste like. Here are few ways I use-
- Adding rock salt to the ginger and garlic mixture.
- Add vinegar and keep it for a few hours.
- Add a tiny bit of salt and sugar and keep it for a few mins.
- Add ginger and garlic separately and frey the garlic till it turns brownish(Your garlic is going to be so crunchy and is going to taste sooooo gooood).
Onions are supposed to be translucent, not brown
This is a never ending debate whether the onions should be fried till it is brown or till it is translucent. I’ll tell you what will happen in both cases.
If the onions turn brown, then we will hardly get any taste of the onion in the food. You will be able to find onions in the food and get very little sweetness but it will be very minute and when it turns brown everything is gone from it. Although if you are making something dry where nothing saucy or liquid is further added to the onions(like salad, bhel puri) then try making it brown because after the onions cool down it will become sweet and crunchy.
If the onions are translucent, you will be able to get the enhanced taste of onions AND the crunchiness will remain intact. For cooked food, translucent onions are a better option.
There are more herbs than salt, chilly and turmeric!
